INDIAN RETRO COMFORT FOOD

Khai Khai’s menu is at the root of India’s extraordinary culinary evolution with its melting pot of distinctive regional food traditions and cultural heritage. Each dish is followed back to its original recipe with nothing spared in the pursuit of authenticity. Every succulent mouthful is a journey back in time. Back to the flavours of childhood and the way Grandma used to make it. Back to elemental cooking techniques and heritage dishes perfected in villages and culinary hotspots across India since the dawn of time.

SMOKE PLAY

At Khai Khai the rules are simple. Legendary dishes prepared over hot stones, coals, wood fires in the revolutionary josper or the age-old tandoor oven. Cooking with natural flame may be the oldest, most rudimentary form of cooking, but it is far from the simplest. Our chefs are masters of the art of smoke play. They skilfully direct heat and fan flames to intensify flavours and to infuse each dish with the perfect amount of smokiness.

From the fires emerge juicy kebabs from Delhi and Lucknow, grilled fish blistered over glowing coals and a variety of biryani recipes cooked dum style.

The Khai Khai team are committed to the importance of provenance and sustainable practices. We source local, seasonal and organic produce, whenever possible. Vegan and plant-based dishes are heavily featured across our menu. We work with a vibrant community of artisan suppliers united by trust and shared values. The story of every dish is rooted in India and then shaped by the hard work and passion of local UK suppliers. Together we celebrate punchy, spicy, smoky, nurturing flavours that speak to the soul.
